How to cut FILLET into SASHIMI

1. Gently pat it down with paper towel

2. Separate a fillet into two sections, top/back portion and bottom/belly portion

3. Cut the top into single serving portions and save them later for grilling/ steaming.
4. Slice the sashimi portion with one stroke at a time
